Chef Patrick Roney

Chef Patrick Roney is the Chef de Cuisine at Ashbourne Farms in La Grange, KY.  He recently worked as the Executive Chef at Harvest in Louisville, KY, a true farm-to-table restaurant where 80% of the ingredients were sourced from within 100 miles.  Prior to Harvest, Chef Roney was the Chef de Cuisine at the Oak Room in the Seelbach Hotel, the first Kentucky hotel restaurant to receive the AAA Five Diamond Restaurant Rating.

We are thrilled to have Chef Roney come to Saratoga Springs during the track season to be our next guest chef in the Rascal + Thorn Dinner Series, and super-excited to be holding it at the Saratoga Polo Association.

Special Evening

Chef Patrick Roney brings to the table an elevated Kentucky Bluegrass cuisine. His philosophy in the kitchen has come full circle as his roots shine true in the fact that he is ingredient driven and prefers little confusion on the plate. At Ashbourne Farms he is able to connect directly with the local agriculture and his eagerness to be more involved on the farm. This is the true Kentucky farm-to-table experience.

With only 60 guests at one seating, our dinner party at the Saratoga Polo Association will be an intimate setting where Chef Roney and his team will interact with guests and provide an incredible evening. A charitable contribution will also be included in the ticket price to Pitney Meadows Community Farm in Saratoga Springs, a teaching farm within the city limits.

Michter’s Distillery

We are very excited to have Michter’s Distillery involved in this event. Michter’s Distillery in Louisville, Kentucky, is a premium spirits maker of Bourbon and Rye whiskies. We recently visited with them on our last Kentucky Bourbon Trail Tour in May of this year.

Chef Roney will be pairing each of his courses with different whiskeys, cocktails and wines from the Michter’s Distillery portfolio.


There is only one seating for this dinner on Saturday, August 4th.  7:30pm

Cocktails and passed hors d’oeuvres will start at 7:30pm.  Multi-course dinner with all pairings will begin at 8pm.

    Such a pleasure to reconnect with one of our favorite chefs today @stonebarns for their #chefinresidence program. The wonderfully talented and ever amazing @victoriablamey was at the pass, creating sensational food inspired by the long and pristine Chilean coast. Keep your eyes and ears open as we resume our gastronomic and whisk(e)y tours starting this fall!
    A huge congratulations to our great friend and Mexico City collaborator, @sofcort who was just named “Latin America’s Best Pastry Chef” for 2020 by @theworlds50best . Her immense talent is only exceeded by her wonderful personality and charm.


Congratulations also to to her original mentor, the brilliant @enriqueolveraf , who recognized her talents early on and put her in a position to grow and excel!


We can’t wait to get back to Mexico to see you and to work with you both again!
