Chef Tim Spedding
Tim is recognized as one of the UK’s most exciting and influential young chefs with an impressive pedigree that includes Michelin star restaurants The Clove Club and The Ledbury in London, and the Quay in Sydney, Australia.
Together with his partner Louise Rødkjær Jørgensen, the pair opened Coombeshead Farm, a rural guesthouse in Cornwall that attracted visitors from around the world to try their farm to table cuisine. Tim and Louise recently left Coombeshead Farm to work on opening their own restaurant and inn in the beautiful Cornwall countryside.
Louise Rødkjær Jørgensen
After a promising career as a handball player was cut short, Louise developed a passion for hospitality. Through working in some of Copenhagen’s best restaurants, she has been able to define what she sees as her ideal destination, which is what brought her and Tim to Cornwall.
Through her work to champion organic produce, Louise has also developed a love of natural or low intervention wines which she hopes to introduce to the guests that visit.
Seasoned
Seasoned is the new home of the exciting culinary arts program at SUNY Adirondack. Its state-of-the-art kitchen facilities and comfortable dining room are at the heart of a superb culinary educational experience that bodes well for the regions gastronomic future and is an ideal spot for this next Rascal + Thorn Guest Chef Series Dinner.
The dinner will highlight prime seasonal, local product and natural or low intervention wines. The wine pairing is optional and there will be non-alcoholic and a la carte wines and beers available for purchase. Dietary restrictions can be accommodated with advanced notice.
$100 per person + tax
4:00pm & 8:00pm seatings
Optional $40 Wine Pairing. Wines and beer will also be offered A La Carte.
