Chef Johnny Spero

Chef Johnny Spero is opening one of the most anticipated new restaurants in Washington D.C. this year called Reverie.  He recently worked as the executive sous chef for Jose Andres’ ** Michelin Minibar in Washington D.C. as well as staging at the highly influential restaurant Mugaritz in Spain.  From Baltimore, chef Spero has worked with James Beard award-winning Chef Johnny Monis at Komi in D.C., Chefs John & Karen Shields at Townhouse in Chilhowie, VA, and also a brief time staging at Noma in Copenhagen.

We are super-excited to have chef Spero come to Saratoga Springs to be our second guest chef in the Rascal + Thorn Dinner Series.

Cocktail Superstar

Chef Johnny Spero will be joined by JP Fetherston from Washington D.C.’s Columbia Room.  JP was recently named one of the best new mixologists in the country by Food & Wine Magazine.  The Columbia Room in D.C. was also just awarded The Best American Cocktail Bar by Tales of the Cocktail in 2017.  JP’s expertise has led to the perfect pairing of cocktails and cuisine.

Both Chef Spero and JP will pair each course for the evening with a different cocktail.  This is a truly special treat!

With only 40 guests per seating, our dinner party in Saratoga Springs will be in an intimate setting where Chef Spero and his team will interact with guests and provide an incredible experience.

This is a very special opportunity to meet and enjoy one of the rising superstars in the dining world and get a glimpse of his upcoming restaurant Reverie.

This dinner will have two rooms.  One room is the Chef Side with 18 seats which view the open kitchen and Chef Johnny Spero at work.  The other room is the Bar Side with 22 seats that view the art of JP Fetherston, the Columbia Room mixologist, who pairs a cocktail with each course.  Please note, there will be no seating at the bar itself on the Bar Side.  This will be a dinner party format with larger table seatings and a view of the bar.  Both Chef Spero and JP will be interacting with both rooms during the dinner.

We have also partnered up with the Saratoga Arms, a top-rated hotel in Saratoga Springs.  They are offering discounted rates to dinner guests of $189 for a King room including a full farm-fresh breakfast in the morning.  Please contact them directly to make room reservations.
