Chef Oswaldo Oliva

We are very excited to welcome Chef Oswaldo Oliva back to New York!

Chef Oliva worked at three Michelin star restaurant El Celler de Can Roca (Girona) with the Roca brothers. Later, he joined Andoni Luis Aduriz’s team directing the research kitchen at two Michelin star restaurant Mugaritz (San Sebastián). After a decade away from his homeland, Chef Oliva returned to Mexico City and opened Lorea with the goal of providing an extraordinary experience. Lorea has been most recently featured on the OAD North American top 100 restaurants list.

In a pursuit to diversify his culinary reach, he opened the more casual Alelí rooftop restaurant. Drawing inspiration from his memorable trip to Saratoga Springs, NY, this eatery is celebrated for its live fire cooking.

Mexico In The Catskills

Dr. John Sconzo (aka “Docsconz”) first brought Chef Oliva to Saratoga Springs, NY, to cook at the second Fire Feast on the Farm at pitney Meadows Community Farm in October 2018. When he expressed fond memories of this event and a desire to come back to the region to do a dinner for us, we knew we had to make it happen, but where? Thanks to a serendipitous visit to the Deer Mountain Inn in June, we found the perfect venue. When proposed to Chef Oliva, the Inn resonated deeply with his long held commitment working with local producers and his culinary ethos.

Chef Oliva will be working closely with the Inn’s Chef, Corwin Kave, to treat Guests to a tasting menu and beverage pairing (NA will be available) that seamlessly blends local gastronomy with Chef Oliva’s distinctive culinary touch. This curated experience offers diners a rich and immersive journey that mirrors both the region’s essence and his personal culinary story.

Deer Mountain Inn

The dinner party will take place at Deer Mountain Inn. In the hills above Tannersville, NY in the Great Northern Catskills, Deer Mountain Inn is a classic turn-of-the-century construction featuring six stunning rooms and a complete, rustic, upstate dining experience.  The 168 wooded acres offer stunning views of the Catskills and an enchanting environment to relax, explore, and recharge.
